Remember my last post about signing up for the half marathon? Yep, I’m still doing it, and even though my training schedule doesn’t have me start until the second week of May, I’m starting to get back into running now. I haven’t run on a consistent weekly schedule since my high school cross country team last fall. Over spring break I ran 3 miles maybe four times, but now I’m going to just dive right in and get my legs movin’!

Today was a beautiful day, mid 60′s with sun- thus a perfect running day. I started my training off strong with a wonderful 3.5 mile run:

Mile 1- 8:34 pace

Mile 2- 8:38 pace

Mile 3- 8:25 (yayy negative splits!)

Mile 3-3.5- 8:04 pace

I’m so pleased! Yes, it was a hard run but I felt awesome afterwards and am glad that I’ve kept that natural “metronome” pacing in my stride. I cannot stress enough how amazing running on my school’s cross country team for two years was. The fall of 2009 especially, I had an experienced, friendly coach who ALWAYS ran with us (some coaches don’t) and he really taught us about pacing, speed, and proper training. He ran xc in college and is a pretty experienced marathon runner. He’s one of the reasons I felt inspired to sign up for the half marathon. That race is just the beginning for me!

Besides starting half marathon training, I got my butt outside to run today because guess what is coming up in three weeks??!?!? My senior PROM!! I’m so excited, I’m going with a guy I often hang out with and he’s a good friend, and I’m unbelievably excited. He hasn’t technically asked me yet, but I’ve been told he is going to hahah- don’t you miss high school drama? I’m trying to do a “three-week tone up” type plan where I’m more watchful of what I eat and exercise consistently. I wanna look the best I can for it! That said, I need dress help. Here are there options, but I’m always looking for more!

I'm kind of wanting either a lavender or yellow dress, this comes in both... But, its strapless which can be a pain

Source

These two are ones I already own, so yes, that’s me wearing it…

It ends right about where the picture ends, I'm thinking it might be a little too fancy or old looking for prom

I ADORE this dress, but I feel weird wearing the same dress to two semi-big events. I wore this to a holiday party for an organization I'm on

Thoughts? Ideas? Suggestions? I’ve only looked online, but I haven’t seen much I’ve liked. I’d love for anyone to help me!

PS- I just ate about 1/2 Fage 0% greek yogurt mixed with about 2 tbs oat milk (a great dairy free milk in my opinion- and yes I know dairy free milk+yogurt defeats the purpose) with about 1/4 quick oats and 1.5 tbs Trader Joe’s quick 8 minute steel cut oats. I let this sit for about 30 ish minutes, then topped with a little less than 1 tsp sweetened coconut flakes and about 1 tsp blueberry preserves. Mix it all up and its SO good! But very unphotogenic so I’m not going to post the picture.

Alright, gotta study for a physics test ugh. Have a great afternoon/evening!

And just for fun, do you have any prom horror stories? Did you wear one of those huge fluffy dresses?

xoxo

Just wanted to pop in and say sorry I’ve been abandoning you! I just (fine, two hours haha) got home from SpRiNg BrEaK which was spent in Floridaaaaa! SO wonderful, relaxing, fun, and I for sure got my tan on. I’m currently planning my “first day back to school” outfit- the last one of my high school days! So sad yet exciting!!

While spring break was full of indulgent eating, TONS of ice cream, and often swapping real lunches for a sweet treat (read: ice cream, crepes, or cupcakes) I’m ready to get back on the horse, so to speak, and get my body in tip-top shape. I did run at least 5 times while on break and it feels so good to get out there again! This morning I did a 3.4 mile or so run and was sweating an disgusting amount upon returning and doing lunges, abs, and arm weight stuff. But I love the sweat! It makes me feel like I’m getting rid of all the stuff I consumed over the past week.

Speaking of running, I have some exciting news for you all- I’m officially signed up for the Chicago Rock N Roll Half Marathon on August 1st. If anyone else is running in it, let me know!! It’s my first half, and I’m going to try and stick with Hal Higdon’s plan. While I’ve never done this before, I’m going in with the intention of running my miles between 9 and 10 minutes. I think this is definitely realistic for me, and I’m excited to start training.

I plan on starting the plan May 10th, so until then, I’m going to build up my endurance some more and stick with runs 4 miles or less and I’ll do some speed work as well as strength training. I’m also planning on reserving one day a week for yoga.

I PROMISE I’ll actually post photos soon and stop being lame. I’m really going to work on improving my blogging now that school is winding down. Oh oh- I know what picture I’ll show you! I just bought my graduation dress (a pain as the requirements are long or tea length, no open back, must cover where your bra strap is, and WHITE with NO embellishment- sounds AWESOME right? not)

Off-White I know, but it was approved by the school thankfully

Source

I still have to find shoes- must be white too, I think.

But that’s that. I hope everyone has a wonderful week!

Sorry for the lack of postage, I’ve been busy with school, fun, and life! In the days that I’ve been gone, I’ve determined I’m obsessed with carrots. Such a perfect, crispy, crunchy veggie that is perfect on its own but also pairs oh so well with hummus. Since starting this blog, I’ve become a little more aware of what I eat. Yes, I’ve always been aware of what I’m eating, and I’ve always been one of those people who likes to find balance in their diet. However, recently I’ve realized there is just WAY TOO MUCH processed sugar passing my lips. Sure, I love most vegetables, fruits, and grains, but I also love cookies, candy, and ice cream. When I eat real food (hey KERF!), I eat wholesome, for the most part unprocessed, food. But I do indulge in sweets as I have a raging sweet tooth. While I find eating sweets totally ok, it must be in moderation. My problem is that once I start, I can’t stop. For instance, today I had a piece of pie at school for pi day. I told myself that would be my “indulgent” treat for the day. Then later tonight, after dinner, I had part of a brownie, a mini “tofutti” ice cream sandwich bar (those are good!), two cookies (that are amazing, homemade oatmeal coconut macadamia nut), a few mini pb cups, and a few licks of the brownie batter left in the bowl after making brownies. See, I had a good old time with sugar. The sad thing is that that I’ve probably eaten more sweets than that in a day. So, my plan is to go cold turkey. For the next to weeks I will not be eating processed sugar. I’ll still allow myself fruit and dried fruit, but my sugar must come from whole, real, unprocessed foods.

We’ll see how it goes. I plan on taking it one day at a time, and hopefully it works out!

But, if you all are looking for some nice ways to get some sugar, let me recommend this recipe for Peanut Butter Blossoms. I whipped these up tonight along with some Ghiradelli brownies to sell tomorrow to raise money for my school’s Relay For Life. Soon I’ll dedicate a whole post to Relay For Life, but for now, check out the American Cancer Society and donate money to help the fight against cancer! Here are photos of those delicious cookies though:

MMM peanut butter cookie dough- I did hold myself back from eating this! I just took a little off of the beaters after I wiped most of the batter off.

I kind of make a mess in the kitchen...

Delicious-looking result. I didn't eat one, but my mom did and she said they were really good! Slightly crunchy on the outside, but chewy on the inside- perfection.

Packed up (in a lulu bag no less!) and ready to be sold to high-strung teenagers tomorrow

I still have more dough left to cook off tomorrow and bring in on Wednesday. I decided to only make 12 cookies for tomorrow as well as the brownies and then I’ll cook off the rest tomorrow so I always have fresh cookies for sale. I’m such a little homemaker

Speaking of, I also packed up my lunch and snack for tomorrow-

TJ's triple layer hummus (Ah-mazing!!!) and carrots for a snack- I packed a little more than usual and some unpictured pita chips to share with friends- I was in a giving mood tonight, I love making/baking food for people!

Ugly photo because I dropped the tupperware as I was attempting to open it, but this is leftover mexican rice with a dollop of guacamole, pico de gallo, and shredded rotisserie chicken (seriously buy the roasted chicken from your grocery store, it makes life so easy!)

So there ya have it. A few meals, a few sweet treats, and a new plan. I haven’t mentioned this, but I’ve been working out more and am trying to do more work with weights. Today I ran about 2.5 miles (still easing myself back in!) and then focused on arms with bicep curls, push ups, single arm rows, and military presses. I also did some squat pulses- stay in a low to mid squat and pulse up and down quickly for 1 minute, it kills, a few lunges and some ab stuff.

I’ll keep you all updated with the no sweets thing. By no means do I believe in deprivation, but until I learn to have a healthy relationship with sweets, I think the best thing to do is avoid them altogether.

Night!

Hola! Today was such a beautiful day- high around 40 degrees and bright sunshine. Right when I woke up I had that overwhelming spirit of spring dawn on me. Doesn’t sunshiney weather just put you in a good mood? Following this I immediately knew I wanted to wear something bright and colorful for the day, and I did just that- jeans plus a HOT pink, ruffley tank with a black cardi. I wish I had a picture to show you- the brightness of the pink made me even more excited for the day. Yay for good moods! Also upon waking up, I realized I wanted to go on a run after school- yes a run! The last time I had ran not on a treadmill was… Mid-January? And even since then I’ve maybe run on a treadmill… three or four times? I’ve been lazy, but its time to get my butt into gear! I’ll be adding a work out page to the blog so check it out, I’ll track my work outs everyday just to stay accountable, ya know?

In regards to my last post, I’ve been sticking to my “nourish my body” goals as I will call them pretty well for the two days that its been. I had a GM on Tuesday:

Magic Bulleted 3 big handfuls spinach, 1.5 kale leaves, handful blueberries, 2 strawberries, skim milk, glug POM juice

And today, after I ran 2 miles- yes I know, not far, but I’m going to ease back into it), I decided I didn’t want a huge smoothie and decided to do a skim milk, ovaltine, kale combo. Umm… apparently the trusty Magic Bullet found this kale far too tough and didn’t have enough other ingredients to blend to help it catch onto the kale because I ended up with chocolate milk plus little curly kale pieces. Kind of weird, but it didn’t particularly bother me, so I drank it anyway and just swallowed the little bits whole. I make it work.

I also went to bed around 10 PM yesterday and got up at 7 AM today, getting the full 8 hours. That must have helped attribute to my good mood this morning, and I didn’t feel tired at all during the day! Maybe this yummy bowl helped keep my energy going, too:

1/3 C oats, 1/3 C skim milk, 1/2 C water-- microwaved-- topped with about 1 T White Chocolate Wonderful, less than 1 T TJ's unsalted creamy PB, 1 tsp Whole Foods Mixed Berry Jam

Why have I waited so long to try PB+J Oats? They are so. damn. good. GAH! I probably will be repeating tomorrow but this time OIAJ- my TJ’s unsalted PB jar which happens to be my go-to PB of choice. Just plain old ground peanuts, none of that extra stuff. Although, PB+Co. White Chocolate Wonderful and Dark Chocolate Dreams do happen to be amazing when I want that little treat, they taste so decadent to me! I did go back for two extra spoonfuls of WCW after I ate this bowl seeing as I cannot STOP when I open up that jar. That’s why it only makes its appearances every so often, its currently tucked out of sight, out of mind, in my pantry.

Tomorrow I might be helping volunteer for Habitat for Humanity- my school builds a house every year and each homeroom gets to go one day and help build. It will probably be some hard work, but everyone who goes says its so fun. Lets hope I get to go! I already have an interesting lunch ready to go- 1 La Tortilla Factory Wrap plus 1.5 tsp or so of TJ’s raw, unsalted, crunchy Almond Butter, 1/2 GIANT carrot, 1 romaine leaf, 1 T feta crumbles and a few dried cranberries all neatly tucked into the wrap. I’m also bringing a fuji apple- or should I bring grapes? I also might grab a Dulce de Leche Luna bar in case I need a snack while working!

I had a lot of questions in this post, and I have a few more I’m curious about, so first off- Does sunshine instantly brighten your mood? What’s YOUR go-to PB? And, should I bring an apple or grapes with me tomorrow?

xoxo,

Emily

With the month of March just beginning, I decided its time to kick up my healthy habits. Sure, that includes getting more exercise and eating better (aka not eating 5 apple spice bars in one night like I just did…), but it also means taking better care of myself as a whole. Sometimes your mind, skin, and hair need a little rejuvenation. Starting tomorrow, here is what I am going to try and do:

1- 10 minute meditation at some point during the day. Sitting with calming music or in silence really helps bring my brain a little bit of peace and respite, especially when I get stressed out. In my gym class as well as an academic class the teachers sometimes lead meditation, and today when my teacher had us do it for about 1o or 15 minutes, I felt so much more clear-headed for the rest of the day.

2- Let my skin be. Yep, this may be counterintuitive to some of you, but I’m one of those people who picks at every little spot or blemish. I do have mild-ish acne, but its made even worse by the fact that I pop my zits (ew I actually hate that phrase, sorry guys if you do too). I probably already have scarring, but stopping my picking will definitely help reduce scarring and redness.

3- Stop blow drying my hair every single day. I usually blow dry my hair everyday because it looks a lot better, but as my skin improves I’ll have more confidence in wearing my hair up, off my face. I seriously have worn my hair up maybe 5 times this year (I’m only talking at school, not outside of school/working out, etc). I feel like having my hair down will cover some of the blemishes and redness. My face probably isn’t as bad as I think it is, but its one of the very few things I get self-conscious about (the other that immediately comes to mind is panty lines, lol). Blow drying it too often will end up making my hair brittle and nasty, so I want to give it a rest some days. I also am in dire need of a haircut.

4- Love life! I’m an optimistic person, but I’m not always the type beaming with energy like this snazzy chica. I want to work on it, maybe a little attitude face lift is just what I need to start getting our of my moody, unplayful, blah funk! Welcome springtime!

Alright dears, there ya have it! I really think taking a little better care of myself will help make me feel better inside and out, we’ll see. I also think I’m going to start consuming green monsters more regularly as both this amazing woman and this one (along with far more delightful bloggies who sing GM’s praises) have reminded me that they can totally give you that “glow.”

Oh- sleep should be included in there, but I like to make attainable goals I’m getting better at going to bed earlier though!

Ahh guys, don’t be too jealous but I just returned from an outstanding dinner at L20. I seriously am the most culinary spoiled 17 year old. I’ve been able to go to the famous Alinea, as well as some other amazing restaurants in Chicago- Spring, Graham Elliot, and a myriad of other more “normal” yet still incredible restaurants. While L2o was similar to Alinea in the fact that they had the option of a few different multi-course meals, silverware changes after every course, interesting yet calming decor, and food descriptions full of ingredients many would think weren’t describing food, the most basic difference is that L2o is more focused on fish (l2o – h2o, get it??). I think 8 of the 12 courses incorporated fish (2 courses were dessert), and the two amuse bouches were both made with fish as well.

Going a bit deeper, the biggest difference I saw between the two restaurants is that Alinea has more of that “wow, this dish is crazy” factor while l2o is more “wow, this dish is delicious.” I simply cannot compare the two and say I like one better than the other, because, lets be real here, its like comparing luxury cars- not matter which you choose, its still the best of the best. Ah I hope that didn’t sound too bratty. I wish I had pictures to show you (and to remind myself!), but I’m not bold enough to start photographing in public, especially because I haven’t even told my family about the blog. With time, my friends, with time. To torture you all a little more though, I’ll share a little description of my favorite dishes. I could rave about every single one, but I have homework to do.

Hmm. One of the first few courses, or it was possibly an amuse, was little squares of butterfish in a pomegranate vinagarrette-y sauce. While at first my dad and I thought the tartness would overwhelm the fish, it really just enhanced the buttery, richness of the raw fish. Another interesting course was a tuna tartare in a corn gelee soft “taco shell” topped with dehydrated corn kernels and tiny cucumber balls. It was served with a salsa verde sauce. The fish at this place is so fresh and incredible, no fishy-ness whatsoever. Another favorite was an indian-spiced salmon that was cooked just the way I like it, with a rare center, so it literally melted in my mouth. It was served with goat cheese (i think) grits that had been encapsulated so they almost looked like little gnocchis. Seriously, the creamiest, smoothest grits ever! They paired perfectly with the buttery salmon. The pork belly was rich and in a delicious sauce, served with “potatoes three ways”, the best potato being the potato emulsion (like a mashed potato, but thinner and creamier). There was also some sort of white fish that was poached PERFECTLY, not joke, I looked at it and thought it was raw but then took a bite and was shocked that it was cooked! It was served with a deconstructed curry- red curry powder, cumin candy twill (I forget what they called it- but it was amazing, such a cool and necessary element to the dish), a jasmine rice emulsion, and two other little sauces that blended perfectly when you swiped a piece of fish through the intricate pattern of sauces. Ahhh, i’m dying right now writing this. Dessert was nothing short of spectacular either. They brought two desserts out before the desserts listed on the menu, and at this point I was already stuffed, but I simply could not say no. The first of the four, technically while only 2 were listed, was an olive oil chocolate ganache. THIS STUFF WAS FAN FRICKIN TASTIC. Seriously, the chocolate was so rich and thick and melt in your mouth I could have sat there all day taking tiny bites of the small ganache piece. Then, to make me die a little more, they brought out a kefir lime fluffy cream thing topped with a mini coconut meringue, with pineapple pieces at the very bottom. The lime mousse was what I thought at the time would be my favorite element of the night. It reminded me of really good, light key lime pie- but even better. I could eat that only for the rest of my life and be happy. Oh, did you see how I said I thought that would be my favorite of the night? Well next came the first of the “real” desserts (even though I seriously could have ended before these began), which was presented as a little oval of mascarpone ice cream, raspberry “caviar” (so COOL!), a few sliced raspberries, topped with a few pieces of gold leaf. Yes, I ate gold. Then, the server poured some warm liquid on top of a lemon-honey gum that had been wrapped in more gold leaf, twirled the vase so the gum melted, and this was poured on top of the dish. The citrusy broth was the best combination of flavors I think I have tasted. Ever. Add in some amazing mascarpone ice cream, the raspberry caviar and a little piece of a white chocolate wafer, and you have the most perfect mouthful. I was so happy. I rather unpolitely had to tip my bowl to get all of that lemony broth out, and no, I did not care that it probably looked funny because it was so worth it. Someone make this for me please!!! The final dessert was a praline souffle with a rum-coffee (i think) sauce poured over it. It was good, but I preferred the other desserts better. Regardless I pretty much consume the entire thing.

You all are probably thinking 12 courses, 4 desserts, how much can you eat? Well, I do admit I ate a lot, but the portions are all small and I left feeling very, very full. That said, I knew I was eating here tonight so I had breakfast/lunch around 11 AM and didn’t eat anything besides a Godiva open oyster all day. Speaking of, that Godiva chocolate was pretty darn good too. Sign up for their rewards program and get a free chocolate every month- you don’t even have to buy anything to get the free chocolate! Obviously, I signed up.

I have so much more to say, but I really need to do homework, so I’ll leave you all to enjoy this post. Don’t hate, I know I’m extremely blessed and lucky to have been to the places I have been.

Also- as I said before, I’m trying to do more core work and starting last Wednesday I have done core work everyday. Wed-Fri I did the exercise TV weight loss pilates, Saturday I did a lot of the core exercises from WLP on my own, and today I did a short 6 minute exercise TV ab thing. I’ve also been taking my dogs on 30 minute walks everyday, so I’m getting some low-key exercise in. Right now I’m trying to focus on not snacking unpurposefully, and I’ve been doing well so far! It makes me realize after I don’t eat that cookie I normally would eat how much I do not need it! I’m used to eating because I’m bored or to avoid homework, but I’ve really improved, well in the past week or so, on eating only when I’m hungry.

On that note, I still need to digest from dinner, do some homework, then hit the hay! Sorry no pictures today, but I promise some tomorrow or Tuesday!

xoxoxo,

Emily

This whole blogging regularly thing is so much harder than I expected. I’m amazed at those of you who can photograph and blog everything, everyday. However, I just don’t think that style will fit with my life- especially since I am still in high school, living at home, and my peers aren’t ones who read (or have even heard about) food blogs. But, this I find blogging to be extremely fun, so from now on I think I’ll try and post at least every other day. I won’t be posting every morsel of food that passes my lips, but I do want to discuss my diet and exercise overall just so I can track myself.

You all are probably wondering about my overall fitness goals, lifestyle, all that jazz. Basically, I want to start getting back into shape. In the fall, I ran on my school’s cross country team for the second year in a row, and the two years before that I played field hockey. I’ve always been active but I found that this year my body was almost resistant to all the running I was doing. I think I gained weight during season, even though I was running the fastest, strongest races I had ever run. I think the weight gain was due to poor diet and me thinking I could eat more because I was running, even though long-distance running (only about 4-5 miles per day) didn’t burn nearly as many calories as I thought it did. I was in great running shape, but lacked toning, muscle, and overall strength everywhere besides my legs. Even my legs weren’t completely toned either. From the end of season (late October) until now I’ve been doing sporadic exercises. ExerciseTV yoga, running when weather permits, 5 lb free weight arm stuff, but I haven’t had a plan. I’ve just been doing whatever I feel like doing, with no specific goals in mind. That changes now. Here’s what I aim to do and how I am to achieve it:

1- I really want to tone my abs. I’ve always had flat, nice looking abs, but this year they’ve gotten a little pooch which is the only part of my body that actually makes me self-concious. My friend has had amazing success with pilates, so I’m going to start doing the ExerciseTV pilates videos 5-6 times per week. My current favorite is the video entitled “Weight Loss Pilates” (I talked about it a little in my previous post) because it has a killer core section that burns like none other, and I’ve felt my core getting stronger each time I do the video. I may also start attending some pilates fusion classes at a nearby studio.

2- Just overall be more active. I can take my dogs on longer walks, run when its not icy out, and use my wide base of exercise knowledge to formulate workouts. I do not have a gym membership so all my workouts are done at home. I’m not sure if I can be successful at all without a gym, but I’m going to try. I have an elliptical, 5-lb dumbells (ill prob get 7 or 10 pounders soon), a band thingy, and a yoga mat. We’ll see how this goes.

3- Diet-wise, I just need to calm down on the sugar. Sweets are my weakness and I want to start better monitoring the amount that pass my lips.

Ok, wow, I’m getting tired and you all are probably getting bored of reading this, so, let me show you my delicious dinner from today that will probably be repeated tomorrow.

Amy's refried beans and organic cheddar cheese all in a La Tortilla Factory wrap, topped with salsa and plain old canned chopped tomatoes. Accompanied by a spinach + grape salad topped with a wee bit of EVOO and orange vinegar. And finally, a blood orange.

This was damn good, and filling too. After eating this I was tempted to grab a snickerdoodle but I stopped myself knowing I’d probably be eating some sugar tonight because I had to work at a school carnival and then was heading to a friends later. Lo and behold, I felt fine without the cookie! I’m so glad I opted to wait and see how my dinner satisfied me without the extra little sweet treat. This showed me that sometimes I just want sweets just because I want them, I don’t need them at all and they aren’t going to make anything better. This is not to say I deprive myself AT ALL, its just me realizing that I can be perfectly happy without eating cookies or any type of sweets when I’ve already eaten a hearty meal. I’m also glad I stayed away from the cookies earlier because I did have 3 or 4 pieces of mini-size candy (snickers and twix I think) and some AMAZING star gummies from Whole Foods later at my friends house.

Ok, wow, its far too late for me to type coherently. Sorry if this post was boring, I still <3 you all though!

Mm… i think im going to be dreaming of oatmeal tonight- I haven’t had it in 2 days!

Snack- I had a failed attempt at making hot cocoa and will spare you the photo, but about 1 C of milk with 2 tsp pure coco powder, 1 tsp or so sugar, and 3/4 tsp instant coffee for a little “kick.” I decided I don’t like coffee. Drank it anyway because I was hungrrrryyy and was heading to the barn to ride. Oh yes, I forgot that little tidbit about me. I ride and show hunter/jumper horses. I usually ride everyday (besides Mondays) and have a beautiful caballo named James. I’ll show you a picture so you all can view his beastly-beatiousness

Oh... Ignore me. Too little sleep combined with stuffy horse shows=gross looking Emily

Dinner- As explained in my last post, I went to Marche in downtown Chicago for my cousin’s birthday. It was my first experience there and I do say I thoroughly enjoyed it. If your ever in Chicago and looking for a place with French cuisine and cool decor, check out Marche.

Onto today. This morning I woke up at 6:15, headed downstairs and did Comcast On Demands Exercise TV Yoga Fitness Fusion. Since I didn’t start it until around 6:25 or so (those early morning music videos got the best of me), I couldn’t finish all 45 minutes of it, but did do about 38 minutes or so. It got my brain functioning and body working, so I was pleased. I wasn’t super tired or sore afterwards so it wasn’t too too intense but still a nice way to start the day.

Due to my heavy, yet delicious, not-veggie-rific dinner last night, I felt a green monster was in order for the good old breakfast.

So.. not the prettiest. But in the mix was 4 good handfuls of spinach, 1 kale leaf, 1 cup (?) skim milk, 2 glugs pom juice, and a handful frozen blueberries all whirred up in the Magic Bullet. It was mighty fine, I think I'll do the same tomorrow

I knew that just the green monster wouldn’t be enough to hold me over, and since I <3 oats so much, I decided oatmeal was in order. I kept it simple this time though, and I didn’t eat all of it because the almond butter+egg white oats made for a gross taste that I couldn’t handle.

Just under 1/2 oats microwaved with water to cover, 3 T carton egg whites, all topped with <1 T PB and <1 T AB, some cinnamon, and a wee bit of skim milk. Does anyone else taste the egg whites if they add it to their oats? Is it because I use carton ones?

Skipping right to my random lunch because I didn’t pack a snack. This was a grab-n-go kinda thing. I tried to come up with the best combo of pre-packaged foods available in my house, and this is what I got: Snack- Because of my light-ish/processed lunch, I went a little heavier on my snack (more like made it food that I would eat at lunch). I did eat, but didn’t photograph, about 1 T of TJ’s dried wild blueberries and a handful of that Amy’s Snack Mix. And I also had this delicious beauty that will for sure be making a reappearance tomorrow, but at its proper mealtime place:

1 slice Pepperidge Farm soft oatmeal (my parents favorite and the only type of sliced bread they like) with WF deli turkey and a dab of BBQ sauce. Why had I not thought of this before? I love barbeque sauce on anything, so obviously it naturally works on a sammie. Note- WF turkey that you get sliced at the deli is wonderful and fresh. Check it out.

Angela from Oh She Glows inspired me to kick up my ab work when she started her Whittle My Middle Challenge. I’ve always been blessed with good abs, but in the past year I’ve noticed a little “pooch” if you will has centered itself right around my belly-button area. An area of fitness that really intrigues me is pilates, so taking my new On Demand Exercise TV obsession, I’ve been doing some of the pilates videos (as well as yoga and some of the Jillian Michael’s and other strength videos). I enjoy most of the videos under the “Pilates Makeover” section, but the one that makes me want to scream out in pain is the one called “Weight Loss Pilates.” This incorporates some weird plies, arm circle, little jump routine at the beginning and middle of the 20 minute video which I often skip. Today, however, I did the entire video and rocked my abs like none other. I want to be rid of this pudge! Very soon I’ll write a post about my fitness goals and such, but this post is so long already I’m going to wind it down and save that for another day.

Now to dinner- Mama once again prepared dinner, and it was really, really good. I ate my dinner with a glass of skim milk.

Turkey Sausage, kale, cannelini beans, onions, tomatoes, and chicken broth all cooked up (actually the sausage was browned and removed from the pan before the veggies were cooked). Mama knows her stuff.

Then, being a cooking fanatic, I decided I hadn’t baked anything in far too long. I swear two weeks, which by my standards is crazy! Oh wait, I just realized I made cookies on Valentine’s Day, still, 10 days is a LONG time.

I couldn’t decide what I wanted to make. Katie, from Good Things Catered, always has good recipes (check out her Apple Spice Bars, they’re a favorite of mine and my friends). But then, I decided I wanted to make cookies. Sticking with the cinnamon theme that had me leaning towards those apple spice bars, I ultimately chose Snickerdoodles. After dabbling through some blogs, I just ended up googling it and chose this recipe. The outcome was pretty good, I think I overcooked some buy just a minute so they aren’t super chewy, but my parents liked them and I know the friends who I give these to tomorrow will consider themselves very lucky. Here’s a photo of the final outcome:

What a pretty sight. I ate four... woopsies! I'm thinking another green monster for breakfast tomorrow!

With that, I think its time to hit they hay. I hope you enjoyed my monsterous post, and I’ve learned my lesson to never EVER skip days that I really do want to share with you because it takes fo’ eva to write up two days. Sorry for the lack of details about mi vida, I’ll try and tie in my non-food life at some point.

Once I upload my photos from this weekend, I’ll share a fine picture of yours truly with you all. Its of your friend working it as a scottish lassie for my school’s turnabout (sadie hawkens, whatever you all call it wherever you live) dance last Saturday. Yes, juniors and seniors dress up in theme to all school dances besides Prom. And yes, the freshies and sophomores have to wear sport coats, ties, and dresses. Its quite a funny contrast. I won’t post photos of my date because he’d probs be creeped out if he ever finds out this exists, but lemme tell you, he was looking pretty fine in a scottish golfer outfit. I love me them preps.

Bedtime, xoxo,

Emily!

Hey guys! Sorry for a lack of post last night, I was celebrating my cousins birthday at the wonderful restaurant in downtown Chicago called Marche. I wish I had gotten pictures because the decor was eclectic and beautiful. It had a French court jester-y feel to it, if that makes sense. I had the Apple and Endive salad to start which was just that mixed with some watercress in a very tart vinegarette. For dinner I ordered the Coq a Vin which was chicken which had been braised in red wine for hours atop a some amazing chewy homemade pasta in a light cream sauce with mushrooms. Is your mouth watering yet because mine surely is. I grabbed a few bites of the Toffee Cake and Peach and Pear Cobbler for dessert. Heaven. Sorry for the lack of photos! I did take photos of my lunch and snack yesterday so maybe ill post those later.

I’m currently at school blogging via blackberry but gotta go to physics. Ttyl!
